Good Foodie PenPals & Good Food

You know you’re having a good day when you come home to a million packages at the door. Specifically, one from your Foodie PenPal! Lindsay from The Lean Green Bean started this awesome idea where foodies could get together and exchange a box full of goodies, basically, it’s like Christmas for foodies every month but even better…because it involves food at your door ;)

So now for the deets on my first Foodie PenPal exchange:

I was matched up with Mariza from My Indulge and was happy to discover that she was also an Army wife AND is from where we used to live right outside DC. Small world! On top of that, she spoiled the crap out of me. Who doesn’t love being spoiled?

Mariza hooked my sweet tooth up with delicious, all natural, baked treats from Buzz Bakery, and then treated me with a relaxing lavender candle and Lush bath fizzes. PERFECT for this tired, exhausted momma.

Needless to say, I was one happy camper after getting this box and her sweet, handwritten note. So now I’m urging you to stop by Lindsay’s blog and check out the Foodie PenPal program. And you know what else makes for a good day? Duh. Even more good food.

If you haven’t already ‘friended’ me on Facebook yet (psst…big pink link on the sidebar that you can’t miss) I raved about a dark chocolate, raspberry quinoa bowl the other week. Well, that warm bowl of quinoa was delish and all, but a raspberry, dark chocolate waffle made with quinoa flour is even better!

Dark Chocolate Raspberry Quinoa Waffle

Prep Time: 5 minutes
Cook Time: 5 minutes
  • 2 egg whites
  • 2 Tbs coconut oil
  • 1 1/2 cup quinoa flour (I used Bob’s Red Mill)
  • 2 tsp baking powder
  • 2 tsp honey
  • 1/2 tsp sea salt
  • 1 tsp chia seeds
  • 1 tsp vanilla extract
  • 1 tsp dark chocolate cocoa powder
  • 3/4 cup almond milk
  • 1/2 cup carob chips (or regular chocolate chips)
  • 1/3 cup raspberries
Whip egg whites until stiff peaks form. Set aside. Combine all other ingredients and then fold into the egg whites. Cook on medium heat in waffle maker and enjoy!

Lunch was a greek yogurt, tuna salad wrap with grapefruit, carrots and pretzels on the side. Nothing special here but it does the trick. Yum!

Anyway, I made her buffalo chicken sweet potato skins after I saw them pinned on Pinterest. They definitely lived up to their pinning hype, because these things are just as good as they sound.

How they look on the other hand is a different story. Let’s just say, food photography is not my forte.


And one last thing before I sign off to play with my super adorable, chunky baby….if you agreed to go on a Target spending freeze with me, how is that going for you?

I failed and went once :( I had to get the green onions (among a few other things) for dinner tonight, haha!
